

Absimilis 2019 is a 100% Pinot Blanc coming from the “La Lemblée” plot in Celles-sur-Ource and growing on brown clay soils. Produced by Thibaud Brocard, this Blanc de Blancs it undergoes 7 days of skin maceration, revealing intense exotic aromas of mango, pineapple and papaya. Aged entirely in stainless steel vats, this cuvée is then aged for two years on slats. It offers a unique profile and a sensory experience unlike any other in the world of Champagne.
